I used Wilton's b/c recipes for many years. But I find the hi-ratio recipes are more stable ...

electrica77, the 1st recipe I posted won't work for you as it's only egg free, unless you use a non-dairy cake mix.

I found several eggless sponge cake recipes, but they contained milk products.

I don't think frying shortening would work satisfactorily for b/c. Sad
(For one thing, it won't have the emulsifiers and stabilizers that make hi-ratio able to absorb more liquid than regular shorte ...
