What I"ve never figured out (and it happens to me) is why they say "Oh good, you can do our cake, here is your deposit, this is what we want..." and then "We'd like to taste these flavors." Wait...if ...

Deposits should be nonrefundable...how much time have you spent working with these people so far?

Its just MHO that the bottom tier should be ONLY pale green with the grasses/fence/whatever...and you should save the blue and clouds for the top tier. You don't want sky both on the bottom ...

I'm actually picturing a tiered cake that is not completely "wonky"...all angled like your top tier but flat...so 4" tiers, narrower at the bottom...

I have that problem too...just wipe it down with a clean damp cloth right before using it....and then I just make sure that I keep the bottom side on the inside of the cake.

I would definitely buy the Wilton boxed stuff just to practice with...maybe try making your own once you are familiar with making the flowers. I hate Wilton fondant taste but it is very easy to work ...
