No flower nail here either, I do bake at 325 (w/ convection that even goes down to 300 now) I don't even use bake even strips - no problems here.

I use the caramel - a can of sweetened condensed milk cooked on top of the stove to the consistency I want ~ adding a little bourbon would have to make it YUM!!
