I use CK hi-ratio in central florida.
I have used crisco as well. I do notice the "crusting" gets harder with crisco, but the high ratio seems "fresher" because the crust doesn't get as hard.

How full do you fill the pans? If you take Wilton's advice they say fill half way. I always fill about 1-3 full that will help.
Also if you use a box mix, they say it fills 2 8in or 2 9 in pans... ... |

I would agree, a week is totally fine. I like the board to get really hard to I don't put a finger print in it!
Plus if you do it early and you mess up you can do it again with out the time crunch ... |

$200 sounds right, but that depends on your skill level.

I would say that the most important part of your cake is to make sure the layers are properly supported. That way the fondant won't pucker or sag.
Don't make your fondant too thick, that adds extra ... |

| I have used both and prefer Sweetex/ high ratio. But I have used Crisco in a pinch and it turned out fine. |
