I'd say the longer they can stay in the freezer, the easier they are to work with! Good tip about watching for funky flavors, though!

If you do, you might consider using 6 feet (or 7 or 8?) instead of 4 .... 2 in the middle to help prevent middle-cake-sagging.

BTW I don't change consistency of my icing from one application to another I make medium stiff consistency and use it for everything. icing, writing, borders, roses, it is much less time consuming.
