| I would say never put real flowers or silk flowers directly into a cake. It doesn't seem nice at all and apart from some real flowers which may be poisonous, even silk stems have been 'somewhere' bef ... |

the flowers look like like they have been made with small blossom cutters possibly out of gum paste. Though they are quite hard to see, so they might have been piped with RI.

You could always set the tiers towards the back of the cake instead of putting them in the center.
This will give you quite a bit more room at the front of the cakes and just around the sides.

You can also use confectioners glaze apparently. Dip your brush into the glaze and gently brush over the cake. I think it leaves it looking slightly shiny though.

You can make flowers with fondant, but gumpaste is better.
It is a stronger paste which can be rolled ultra thin to get realistic petals and is easier to work with.
