How do you adjust the width of your cookies or how you make them even? Also, what is the ideal width? |

If you mean depth? I use roller pin rings. You put them on each end of your pin and roll out your dough, you get the depth that your ring is at. You can pick up a set for around 10.00 or so. They have all different sizes. If you meant width, that depends on your cookie cutter. |

I use different size dowel sticks at each edge of my dough when I roll it. Use what ever size for the thickness of cookie you need.

For my first batch of cookies all I had on-hand was 3/8 inch wooden dowels left over from my "candy topiary phase" so I used them. They worked but they tended to roll around. I'm thinking of going to the hardware store and purchasing wood slatting in various thicknesses and trying it. Since it's flat it won't roll around. I don't know how thick a wooden yardstick is, but that might work, too. |
