I have to bake cheesecakes today. And for some odd reason I went blank on how to do it. I have done them before but I jsut can't remember it. But I was wanting to know when you put the filling in do you fill it all the way to the top and also when removing them from the pan whats the easiet. I remember doing something with water. Any help would be nice! Thanks!

most cookbooks have instructions for cheesecake.
If you fill the pan to the top, it will take longer to bake, and some will bake over the edge.
The springform pan must be carefully wrapped in heavy duty foil to prevent leaking in the water bath.
The filled, wrapped pan goes into another larger pan. fill it about 1/2 way with hot water. baking in the water bath helps prevent overbaking and cracking.
