Hey everyone!

I am in desperate search of a coconut cake recipe. I'm looking for one that is moist and has a light coconut flavor, one that isn't sickly sweet. Thanks so much in advance everyone! Smile

I know alton brown had a show on one.. i dont like coconut but the cake did look good

if your looking for a cake mix- I always use duncan hines white cake and replace the water with coconut creamer, the liquid kind.
It is a great cake and has awesome texture and flavor.

I've never tried this recipe, but it came up in a thread that may have been destroyed in the crash about best scratch cakes. Lots of people raved about this recipe.

Key Lime-Coconut Cupcakes

*inspiration from GrandmaG


1 2/3 C granulated sugar
2/3 C oil
1 14oz coconut milk
1/4 C rice or soy milk
1/4 C lime juice
3 TBLS grated lime zest ( I didn't have any so I didn't use it)
2 tsps. vanilla
3 C all purpose flour
2 tsp. baking powder
1 tsp soda
1 tsp salt
1 1/2 C shredded coconut

Blend sugar, oil, coconut milk, soy milk, lime juice, zest, and vanilla.
Sift flour, baking powder, baking soda, and salt into wet ingredients in batches, mixing well after each addition. Mix in coconut.

Bake at 350 for appr. 18 minutes. Makes about 30 cupcakes

Key Lime Cream
3 TBLS Key lime juice
Sweetened condensed milk
1 C whipping cream

Whip cream and fold in lime juice and sweetened condensed milk. This called for only 2 TBLS of sweetened condensed milk but I used a lot more than that. I have a squeeze bottle of it so I just added to taste.

Coincidentally, I've been looking for a great coconut cake recipe also.

Has anyone acutally made one themselves and can recommend a recipe. I have seen the above links but not sure which one to try.

I bake white cake layers and while the cake is still warm in the pan I pour cream of coconut over the layers. It makes a wonderfully moist and delicious coconut cake.

I saw a coconut cake recipe on Martha one day before Christmas and it looked wonderful. Here's the recipe and you can click on the pic for the video.

The guy owns a resturaunt and sells these things all over the country and ships them. It looks wonderful and I want to make one. It looks expensive though.

This is one I have used several times, anyone who likes coconut wants the recipe. I got it from someone at work and everyone wanted her recipe. It is also easy to find on the internet. Easy and very moist!
Sour Cream Coconut cake

1 cake mix - butter is suggested, baked according to directions (2 layers)
torte to make 4 layers.
Mix together:
2 cups granulated sugar
2 cups sour cream
12 oz. frozen coconut - thawed

(reserve 1 cup) use to ice between your 4 layers.

Add remaining cup with 1 1/2 cups whipped topping to ice cake. The directions say to let set for 3 days. I have and it is very moist. the cake absorbs the coconut flavoring. We have also eaten it before 3 days. I guess you could use other icing if you want to. It makes a great cakee. I have never tried decorating it.

OMG Surprised This is the recipe I've been dying to get. This guy was in the Food Network Throwdown with Bobbie Flay and he won. His cake is supposed to be out of this world. They sell for $100 plus shipping. Can't wait to try this. Thanks for the link Thumbs Up!
