I was wondering if anyone has had experience with edible images on chocolate. I will be doing a wedding with cupcakes and the bride wants their entwined monogram on each cupcake. I thought chocolates with the monogram on top would be great. Any thoughts or suggestions would be really appreciated.

I don't think you can put edible images, like those used on cakes, neatly on chocolate because the image requires some type of moisture (water, corn syrup, grease) to adhere. If the chocolates are flat, I suppose it could work OK, but it wouldn't be my first choice because of difficulty/mess in application, added bulk to the piece, texture/flavor issues, etc.

You can get custom made chocolate transfers made in monograms, but they are costly and you usually need to buy tons.

You can paint on a monogram with colored cocoa butter. Chefrubber.com sells all colors, including silver and gold and it looks fantastic. You could get a monogram stencil set and do that with the colored cocoa butter. It would look super.

"Using our products to decorate chocolate is easy. Cast the chocolate and after it cools and is removed from the mold, spread a little warm chocolate to the back of the edible paper and adhere it to the bar. Corn syrup, thinned with a little water, applied to the bar or back of the edible paper works well. Piping gel on the bar or back of the edible paper also works well. Another way is to place the edible paper, face down, in the bottom of the mold and cast the bar.

EDIBLE GLUE
Will work on almost any surface that gets hard.
4 teaspoons all-natural egg whites (meringue powder, such as Just Whites, available at most stores)
1/4 cup warm water
3 cups powdered sugar, sifted (optional, but reduce water to a little less than meringue package directions)

Instructions:
Gently stir together egg white powder and water according to directions on the egg white powder package or until completely dissolved. Beat in powdered sugar until thick and smooth. Use immediately.

"you spray the (chocolate) lolly molds with a little pam place the image down and then pour the chocolate over it.

The pam keeps the image stuck so the chocolate doesn't seep underneath and allows the whole thing to slip out easily when set.

Or you can wait until the choco is set and then put a little melted choco on a thin layer and place the image on.

That's how I do the photo in frames or on the chocolate covered oreos"

So, I stand corrected, it certainly can be done. I don't use edible images, so my ignorance shows. Embarassed That said, I really do think that gold cocoa butter stencilled monograms would be very classy for a wedding. Wink

Thanks so much for all the information. I really wanted to do the stencil but they have a custom mongram that incorporates both initials so that would not be possible. My husband and I were going to try to make our own stencil but it is so small and detailed I don't think it would be possible. This seemed like the next best way to do it.

Thanks again for all the help. We are going to try it out tonight with some square molds w/ white candy melts. I will let you all know how it works out.
