I am looking for any relatively simple ideas for a 2 year little girl's birthday. I am thinking of doing a sand box cake but I can't find any simple ones....

How about a double layer 9x13, stacked on top of each other. Then you could cut a rectangle out of the top layer, maybe 1/4" deep or so, and fill it with "sand." I have made sand out of crushed nilla wafers, crushed graham crackers, brown sugar, sugar in the raw and grape nuts, but any combination of two or more of those ingredients would look great.
Have you worked with fondant before? You could model typical sand box toys out of fondant and scatter them in the sand, eg, shovels, pails, rakes. Then maybe write in the sand "happy birthday".

I thought it was pretty easy the first time I used it. And that was only the second cake I ever decorated! Just stay away from Wilton. Blech! I use Satin Ice, myself. My friend tried MMF for her first fondant covered cake and liked it, so you could try that too.
