i want to use modeling chocolate to cover a cake that i have to deliver tomorrow. i know i need to make it tonight so that it can set up but i want to color it pastel green. should i use gels, considering they have the closest consistency to the corn syrup? i was thinking i would mix the color into the corn syrup before i add it to the chocolate? would that be the best way to go about this? i should have thought about this before today! haha please help!
The only advice I have is to use wilton color,Americolor will sieze your chocolate.Sorry wish I had more answers.

If it's a pastel green, you can color it before using it tomorrow too after the modelling chocolate sets. I use gel colors and they work just fine, knead the in when you do your kneading.

I agree with Cakebelle, I use the Wilton colors and have never had a problem. I also let mine sit overnight first before kneading it and coloring it.
