I have a recipe for a mousse that calls for whipping cream. As I expect this cake will sit out for several hours.....do you think I can substitute Bettercream in the recipe???

I don't know how stuck you are on using your recipe but I have used the bettercream and before I whip it I add a couple of spoonsful of cocoa powder and everyone raved about it. And then it will be stable for days not hours. HTH.

Have you tried Pastry Pride...it's a non dairy whip cream frosting....I frost cakes with it.....add it to pudding for a light filling or to raspberry or lemon filling to lighten and fluffy.

I'm on the West coast.......Check on line in your area....it works great and hold good.....as long as it isn't to hot out.

How do you actually USE Bettercream? I've heard you just whip it up. Is that right? Or is it like heavy cream?
Is there a recipe you use it in?

To answer your specific ?: Yes, you can sub "Bettercreme" for whipped cream in your mousse recipe for use as a cake filling.

vickymacd- Yes you just whip it. It is about the consistency of heavy cream. You can buy it at GFS. It is 1qt. for $4 something. I only use about 1 cup to a few spoons of cocoa powder. I have whipped it alone to use as frosting and wasn't wild about the taste but I Love buttercream so it would not be my #1 choice of icing.

I LOVE using Frostin Pride or Bettercreme ~ you can do so many things with it!

I add pudding mixes, blend it with sleeve fillings, add melted chocolate, or just use as whipped cream for a cake I make called "Sundae" with chocoalte, strawberry and whipped cream filling.

I have also used it in a pinch when I didn't have heavy whipping cream for a caramel filling (boiling in a pan with butter, brown sugar and corn syrup) - it worked great!
