So I am doing a wedding cake for someone and they have now asked me if I could make homemade cream cheese mints and if so for how much? I have never made them before so I have no idea the amount of work or what I should even charge for them....
She also wanted me to provide punch and again I have no idea what to charge for this??? (I think I should have said no...)
I don't have a price for you, but to me they are a lot of work! It will take a lot of time to press out all of those mints, so make sure it is worth your time!

I used to make these for every wedding I did, back when I first got started. THey are a lot of work, but they are pretty simple. It's like putting play doh in a mold and popping it out. There are special rubber molds you use ... not the hard plastic ones you use with melted chocolate. The worst part is the mixing and the clean up. Big hint .... if you are going to color them, mix the color in with the cream cheese before adding the powdered sugar ... MUCH easier!!
They will take more time than melted chocolate mints, so factor in add'l labor costs. Remind your bride these are hand-molded, one at a time ... no mass production involved in these and there is a cost involved in that!

I charge $0.20 a mint. I can get about 250 done in an hour. That's $50 an hour (before deducting ingredient costs and such.)
