I just looked it up a few minutes ago...I'm making banana bread. There are a couple of different ways to do it. I used a tablespoon of vinegar, then add milk to fill up a 1 cup measure, and let it stand for five minutes.
It didn't thicken like buttermilk but it tasted right. |

Ditto Texas_Rose! I never buy buttermilk, it's a waste for me. I always use the sour milk sub in my red velvet cakes and it turns out great! |

uuugggghhhh I know I saw a recipe the other day that someone (sorry I don't know who) posted with substitutions options to use when you were in a pinch... I thought I saved it to my recipes but it isn't in there... it had that on there the buttermilk, lemon juice thing.... did anyone else save it, it was a great tool! Or if the OP sees this, can you tell us where to find it? |

I use 1TB lemon juice and add milk to make one cup. I allow mine to sit for about 5-10 minutes and it gets real thick. |

One more vote for vinegar and milk. I've heard about lemon juice but I've never tried it. |

There is a tip in Women's world that says mix 1 cup of milk with 1 tbs lemon juice for every cup of buttermilk. Let the mixture sit for 10 minutes before adding to the recipe. Sounds like this is the same thing you read. |
