Hi all!

I have leftover scraps from a lemon cake I made and need a recipe for cake balls.

I already searched for one and can not find any.

I have a container of cream cheese icing (BC). How would I attempt to do this?

You need moisture to add to the cake pieces in order for it to hold into a ball. You can add some of the cream cheese icing and mix it together. Some people use a spoon or spatula, some use their mixer on low.

To intensify the lemon, you can add a bit of lemon zest to the mix.

I use Cookieman's version described in that thread. You can use liquids or the icing as a binder. Just mix a little in until it starts to hold together when you form a ball. You don't want to oversaturate them. I usually don't let them sit to dry, I just start dipping.

Good luck, lemon is yummy! I'd add in some zest also if you have it.

Just use the cream cheese or what ever you decide to /to bind it together and make ball and dip or roll in a topping !

I think I might dip the leftovers in the cream cheese frosting and then maybe roll them in coconut...what do you think???
