I was looking for that thread about leveling the cake by flipping it over on a saranwrapped surface and putting pressure on the top of the pan... can't find it. how long do you cool it before you flip it? or is that straight out of the oven? woudln't it melt the plastic if it was straight out of the oven? Haven't seen that thread....
However, you can level the "hump" as soon as you take the cake layers out of the oven.
Simply cover the top of the pan with a paper towel and then press down with (the bottom of) another cake pan or cookie sheet, etc.
Cool cakes in pan for about 10 mins. and then turn out onto cooling rack.

Yes, you can turn it out on Saran wrap and it doesn't melt the Saran! I do this and use the same size pan to press the cake down to even it out perfectly!
