I'm making a cake for my son's 1st birthday party. Obviously, he will have his own to smash, while I'll be making a bigger, prettier one for the rest of us. I only want to make one frosting to cover both cakes. I have been making the Crusting Buttercream (VIVA Method) recipe, but it's too greasy and doesn't work well for cake smashing (this is his second party for the other half of the family).
I'm covering the big cake in MMF, and would like a decent layer of frosting under it, not too thin. Should I stick with the Buttercream recipe I've been using? I really like the consistency and taste of Publix's buttercream, so something like that.
Any ideas, tips, suggestions, etc would be greatly appreciated!

I love indydebi's buttercream recipe. You can find it if you do a search. Its really smooth and i dont find it greasy.
