I have been a member of CC for a couple of years now, but only recently started to really get in to making cakes on a regular basis. I tried the chocolate doctered cake mix recipe and OMG! It frosted like a dream, held the weight of my palm tree proto type without falling apart, and got rave reviews. I had nightmares that the tree would pull off the support dowel and plunk down onto the base cake. But it transported and held up perfectly for a "Margatritaville" party. Not that my co-workers would ever complian about my trail cakes , they love getting the experiments! The final cake will have a much larger tree, I'm still working out how to stack and support that version. I'll never make a plain cake mix again, cross my heart, hope to die! Even though the overall cake design was not very good, I was delighted with the palm tree and will work out the rest of the design so that it's more appealing. I know it needs more palm fronds sticking upright. I'll take any sugguestions to improve the design, so I've included the picture. |

I can never find a recipe twice, but I wrote it down:
Ducun Hines cake mix
4 egg whites for white cake-whole eggs for chocolate
1/3 water- coffee for chocolate
2/3 cup butter milk
1/3 cup oil
1 pkg. instant pudding (my mix had pudding in it so I left it out)
Makes a dense but moist cake! |

Might I suggest taking out the pudding and adding 1/2 cup sour cream? It makes for a wonderful cake. JMO. |
