Okay I'm about to cover two cakes with MMF but I'm not sure if I should make double batch or not.

One is and 8 X 11 brownie pan and the other is a 9 X 13 with 2 layers..

Depends on which recipe you are using, but extra is better.

I would make two batches for sure. If you have a little leftover it's okay, it will keep for quite awhile!
Better to have too much than not enough!

It's been awhile since I've mad MMF but I'm almost positive that should be enough. Hopefully someone else will be able to give you a definate answer though.

This is the recipe I use...very simple

16 oz white marshmallows
2 tb water
2 lb icing sugar (approx. 8 cups confectioners' or powdered sugar) (not all of it)

It depends on how thick you roll it and if you're making decorations too or just covering the cake. I would make two batches personally. If you end up with extra, the excess can be stored in a ziplock bag in the fridge for months (coat the mmf in crisco, wrap in plastic wrap, then stick in the ziplock bag in the fridge) so it's not like it will go to waste.
