I poured royal icing into nautical choc. mold . I thought royal icing hardens pretty fast. My molds have been drying for 2 days now, but are still moist underneath. I put them in the freezer to speed up the process but nothing is changing. What am I doing wrong? Help this will be my first wedding cake and I need alot of seashells for the cake!

You really can't mold RI. It needs air to circulate around it to dry properly.

You can mold chocolate sea shells with candy melts (if you don't want to fool with tempering) or you can mold fondant/gum paste shells in the mold.

If you are trying to mold royal icng you must have air movement underneath. That means that you must have a hole in the bottom of the mold to let air in but that will let royal icing run out the bottom. You might try using a piece of tape to close the hole until the icing hardens and then remove the tape in hopes that the icing will dry. Keep out of the fridge as moisture won't help harden the icing at all.

I've never tried this, but maybe you can pour a little bit of RI into the mold, let it dry, then add more until it's full.

just_for_fun what a great idea. I often thought of trying this but knew the royal would take forever to dry.

The layering technique might be the way to go. You could probably use a paintbrush and just keep painting on layers or royal.
